We serve Key Lime Pie on the island every Friday night as part of our “Belize Night” menu. This is actually my mother’s recipe, who is from the southern US. I always order Key Lime Pie when I see it on a menu, and I have yet to find a recipe that beats this one. For one crust: ½ box (1-1/2 packet of graham crackers) graham crackers ¼ cup sugar ½ cup (2 sticks) butter Melt the butter. Crus

Many people who contact us are confused about the difference between an atoll and an island. We own the island Long Caye, which is located at Glover’s Atoll, also called Glover’s Reef. We often hear “I want to visit your island, Glover’s Reef.” But this is incorrect. If you are also unclear as to just what an atoll is, I hope that this will help. Atolls are made of co

I just returned from 5 weeks in Belize. During that time we hosted over 150 guests on our island. It was a blast! We had a wonderful time: guests and staff alike. On my last morning on the island we posed for a new staff picture, left to right: LaVern Garcia, Neri Chi, Magdaleno “MJ” Yacab, Lucy Wallingford (with Coco the Bunny), Victor Myers, Marcy Noralez, Mark Hopkins, Martin Ramire

Here are the videos Sunrise session off long caye clip from Victor Myers on Vimeo. Long Board Footage Here Priceless kiddo footage So we had a banner week for surf. Probably should have been running a surf camp this week. Strange SE and NW winds built and stacked everything up nicely and the surf held in from Tuesday to Friday.

We have a new island pet: our bunny Coco! Our bunny Lucky died in 2005, and the staff got me a new bunny as a present. We had a naming contest on an early March trip, and named her Cocoa Damselfish (after a fish we often see while snorkeling); Coco for short.

Sometimes we have a huge group that wants to rent the island. We’ll do this for 28 guests+ in the ‘high’ season (Dec – April, except on holiday weeks) and for 15+ guests the rest of the year (except hurricane season: Sept/Oct). Renting the island includes all the sports gear and guides. We don’t allow our gear to be used without our staff supervision. If you want to rent the island witho

We have just posted a new detailed Belize map online. Earlier this winter I was searching for an accurate Belize map online and could not find anything useful, so I created one. Anyone looking for a specific island or town will hopefully find this map valuable. Visit our website: http://www.slickrock.com/detailedbelizemap.html
